Blueberry Banana Pancakes!

Two treats today - a delicious and simple breakfast recipe, and a cooking video of the process and one about the blarg, featured on Leave it Better, a video-based social network where people can share ideas on how to improve their communities and take action to green their neighborhood! Woah! :D

Now that's a goooood morning. :)

This is my absolute favoriteee basic pancake recipe. It uses mashed banana in place of an egg, giving the pancakes a nice flavor and a little sweetness.

The banana base works really well with add-ins like chocolate chips and banana slices (an all time favorite - banana chocolate chip walnut, sooo good!). It can also be very easily replaced by any other mashed up fruit base - apple sauce or canned pumpkin works perfectly!

Peach Blueberry Banana Pancakes
yields ~12 medium sized pancakes, about 3 - 4 servings


1 1/2 cups whole wheat pastry flour (or all purpose flour)
1 TBSP baking powder
1 /2 tsp salt
1 TBSP sugar
a dash of cinnamon

1 1/4 cups soymilk
1 medium banana, mashed

1 1/2 cups blueberries and chopped peaches

1. Combine the flour, baking powder, salt, sugar, and cinnamon in a bowl and mix.

2. In a separate bowl, mash the banana. Add the soymilk. Mix, then pour into the dry ingredients. Mix well (whisk time! :D).

3. Fold in the blueberries and chopped peaches (and any other add-ins you want!).

4. Heat up a nonstick frying pan, then set to medium-high heat. Scoop 1/3 cup of batter and pour onto pan to form a circle (depending on the size of your pan, you can probably fit a few).

5. Once bubbles form in the center and the edges appear slightly cooked, flip the pancake. Let cook on the second side, until both sides are lightly browned and the center is cooked through.

Dig in!

NOTE: as tempting as it may be, DO NOT press down on it with the spatula. I knowwww it makes a nice sizzling noise when you do, but it turns out that's what takes the fluffiness out of the pancakes, haha. Took me a while to find this out.

Remove from heat and enjoy! :)

Suggested variations: (all tried and true... and completely deliciouuus)

Apple cinnamon walnut: Replace the mashed banana with 1/2 cup of applesauce. Add 1 tsp of cinnamon in with the dry ingredients. Add chopped apples and walnuts.

Pumpkin spice: Replace with mashed banana with 1/2 cup of canned (or fresh if you're ballin') pumpkin puree, and add an additional TBSP of sugar in with the dry ingredients. Add 1 tsp cinnamon, 1/4 tsp nutmeg, 1/2 tsp of all-spice, and 1/4 tsp of ginger (or 2 tsp of pumpkin pie spice if you have that around). Throw some chopped walnuts or shelled pumpkin seeds (called 'pepitas') in with the batter.

Experiment with your own ideas! The sky (or maybe the griddle?) is the limit! :)

Mashed banana can also make a healthy addition to the pancake recipe.

Haha, yep! The recipe listed does contain mashed banana.
