Mexico... and more muffins!

Saludos desde Mexico! Ariel here, with your usual blarging from an all new location! I have recently moved to Mexico (yup, really!), and have been busy settling in, starting up at my new job, learning the language, and, of course, trying new food.

Not to mention eating tons of fresh produce from the local markets. I'm in fruit and vegetable heaven!

Reads: Delicious carrot juice. Not false advertising! 
I've been here for about two weeks, and already am falling in love with the place.

Month of muffin mania, 2!

... and then there were EVEN MORE MUFFINS!

The month of muffin mania/madness continued with more delicious muffins. It is with great honor, joy, respect (for sweet (and occasionally savory) bready breakfast foods), and a touch of sadness (for the last muffins ever!!!! of muffin month; statistically speaking I am likely to bake more muffins in the very near future).

These four recipes were the favorites of the second (and last!) half of the muffin making, and the coconut lavender muffins made an encore appearance (by very very popular demand) at the historic last muffin morning.

Not just fuzzy soybeans... tempeh!

Okay, okay. So I know you were expecting more muffins (and they're coming up soon!), but I couldn't wait to share my latest culturing adventure.

Before you run away screaming, these extremely moldy soybeans are actually intentionally so - they were inoculated with isolated spores and incubated under specific conditions to promote only the desired kind of fungal growth. It may look fuzzier than what you're used to, but it's... tempeh!

Month of muffin mania, 1!

It's been a month of muffin madness around here!

It's hard to find a person who doesn't like a muffin, so over the summer I decided to spend September honing my muffin baking skills by baking muffins for my housemates (expert taste testing team) on a biweekly basis (in the twice-a-week sense). They're all interesting twists on the classics, with original recipes and the approval of approximately 30 happy tummies. They were all delicious, but the ones I've decided to share all got rave reviews. Enjoy!

Ithacan summer gazpacho!

Summer in Ithaca is pretttttttty nice. Swimming in gorges, enjoying the sun and the green, napping in hammocks, cooking with friends... not to mention brief over-abundances of perfect delicious local vegetables. Most recently? Tomatoes!

It's like they say: when life gives you a kitchen full of just ripe organic heirloom tomatoes (on several occasions!), accompanied by some beets and cucumbers and other local goodies... make gazpacho!

And so we did. Mmmmmm.

Fresh raspberry pie-tart with graham cracker crust!

I know, I know. We claim all of these recipes are the best ever. But we mean it!

Sweet and simple, the beauty of this pie is that you get the deliciousness of berry pie without cooking your berries to mush. The berries in this pie/tart (your pick!) are still fresh, and held together by a filling made with (also fresh!) raspberry juice.

We brought this pie to a (splendid!) picnic at Shakespeare in the Park... and the event photographer may have taken more pictures of the pie (and the rest of our food) than the play itself. ;)

Zucchini Cake with Lemon Curd and Ginger-Coconut Buttercream Frosting

In Ithaca, there's a running joke about the over-abundance of zucchini that comes around each summer. It goes:

Why should you always close your car windows in Ithaca in the summer?
Because if you leave them open people will fill your car with zucchini!

Har har har. Okay, so that's probably not actually what would happen, but it would be pretty funny. Either way, summer 'round here means more squash than a person knows what to do with!

So naturally, what else to do but bake a cake? :)

Candied ginger, ginger syrup, and... lemon ginger coconut ice cream!

Disclaimer: This post contains the recipe for what is possibly the most impossibly blissfully delicious thing ever.

Get ready to be gloriously giddy with gingery goodness. If you're at all like us folks here at the blarg (and a bunch of people we know), you probably think that adding ginger to most things makes them instantly delicious.

And what we're about to share with you is so delicious, it's kind of unreal. Seriously, you may want to sit down for this one (okay, so you probably already are).

Cooking with a Carnivore!: Week 2, Seitan Veggie Chili and Cornbread!

For our second week of dinners with our carnivore buddy, we decided to spice things up a bit! This is a seriously hearty chili, chock full of beans, (beans, and beans), tomato, veggies, and chunky pieces of homemade seitan... and a spicy kick!
It was a chilly day so we decided to make chilli!
This recipe is a bit more involved - in order to make sure the beans and tomatoes and spices have time to meld together it's important make this one the day before you plan to eat it.

Delicious and nutritious!

Welcome to the first installment of the latest segment on the blarg, 'Cooking with a Carnivore!' in which we help out a friend who's given up meat on Fridays for lent figure out what to eat in the form of multiple-course delicious vegan meals! :D

Quick disclaimer - our friend is a self proclaimed "carnivore" (in the, every good meal should have at least one steak sense), we don't mean to offend/generalize anyone who consumes meat, I know that carnivore is sometimes used by vegans derogatorily. Ahhhh, maybe I don't mean that either! Too much politics!

Vegan Browned-butter Lemon Berry Tart!

Rich and flaky browned-butter crust... perfectly tart lemon custard... refreshing fruit... 
Though this recipe may seem a little out of season, the recent resurgence of berries (on sale!) at the grocery store reminded me just how delicious it was and I couldn't resist sharing. (:

Also you guys don't understand this thing was EFFING amazing (this is Alex speaking, I actually spent most of my time during the making of this masterpiece at work but got to enjoy the fruits of the labor!) ~(@o@~)

Spicy Stir-Fried Tempeh with Coconut Curry Rice!

This dish is delish! It's got a wonderful mix of subtle flavors, warming spices and filling heartiness that's perfect for a cold day, a rainy day... a Monday... any day! :)

Here is a lil' history on this dish! So one day my boss was eating this really awesome smelling rice curry coconut thing, and I (Alex) kept staring it. He eventually told me what it was and offered me a taste, and I probably had the closest thing to an orgasm in the lab without getting in trouble or embarrassed (yes, thanks for sharing). He then e-mailed me the recipe, and we made it with some improvisation, and it turned out awesome!

It packs a balanced and healthy punch of whole grain and hearty protein, and coconut fat which is *totally* good for you (according to some people). And tasty! :D
