Candied ginger, ginger syrup, and... lemon ginger coconut ice cream!

Disclaimer: This post contains the recipe for what is possibly the most impossibly blissfully delicious thing ever.


Get ready to be gloriously giddy with gingery goodness. If you're at all like us folks here at the blarg (and a bunch of people we know), you probably think that adding ginger to most things makes them instantly delicious.


And what we're about to share with you is so delicious, it's kind of unreal. Seriously, you may want to sit down for this one (okay, so you probably already are).


First, I followed a recipe from another blog called Brooklyn Farmhouse (cool, Brooklyn!) for Candied Ginger and Ginger Syrup.

You might be thinking - make my OWN candied ginger (and syrup)? That sounds difficult!

But actually, it goes like this:


1. Peel ginger (1/2 a pound of it!).


2. Slice ginger.


3. Boil water (2 cups), add sugar (also 2 cups), add ginger, stir until the sugar dissolves. At this point, your entire house will begin to smell incredible.


4. Let simmer for an hour (on the lowest heat simmerable!). If you're a compulsive stirrer, stir as (in)frequently as you feel compelled to do so. :D


5. Remove the ginger from the liquid with a slotted spoon (let it drain as you go), and gently plop it on a baking tray lined with parchment paper coated with ~1/3 cup of sugar. Spread 'em out, and toss them around in the ginger.


6. Pour the liquid in a jar!

Let the candied ginger dry out a bit (a few hours or overnight) before you store it away/hide it from your friends, and let the ginger syrup cool a bit before storing it in the fridge.


ITS SO GOOD. SERIOUSLY. And incredibly easy! No messy cleanup, either! Now you have candied ginger to chop and put in all your baking (/ice cream!!!!), and delicious ginger syrup to make things like ginger lemonade, ginger lemonade ice pops, ginger kombucha, ginger mixed dranks, ginger ice cream... ginger everything! The world is your spicy oyster. :)


Lemon Ginger Coconut Ice Cream
yields ~2 cups, serves as many people as can get at it fast enough with spoons!

1 can (15 oz) full-fat coconut milk
1/4 cup ginger syrup
1/4 cup sugar
zest of a lemon
juice of a lemon
1/2 tsp powdered ginger

1/2 cup finely chopped candied ginger


Directions:

1. Chill yer ice cream maker (according to its directions, of course)!


2. In a bowl, combine the coconut milk, ginger syrup, sugar, lemon zest and juice, and powdered ginger (sprinkle that in), and mix well.


3. Pour the mixture in an ice cream maker! Make it make ice cream!


4. Towards the end of the churning process (when it's thick but not quite done - your ice cream maker may have a designated setting for this), toss in the candied ginger.


5. EAT IT OMG IT'S SO GOOD.


This ice cream is refreshing, zingy, light, fluffy, rich, creamy, amazing. The first time we made this, it was literally devoured in minutes. So we had nothing else to do but... make it again! :D
